OK now I really love this place. I LOVE smoking food. Here's my lil operation. Last weekend I smoked a stuffed pork loin. They were on sale at Fry's for 1.88 a lb. Here's the recipe I started with. I made a few changes to suit my taste but it's still awesome just the way it is. My change is that I put it on the rotisserie at high heat to get a crust on it, about 10 minutes. Then I throw it in the smoker til it's at 160 degrees internally. MMM MMM good.

I just picked up some brisket and pork butt to smoke for easter dinner saturday night with the in-laws!! Should be tasty!

At my uncles this weekend before we head the rest of the way down to Padre Island, and he smoked up some corn and brisket for dinner tonight. I always love the briskets he makes, but holy crap, I've never had smoked corn before. He smoked it with the brisket, cut it off the cob, put it in a pan with some butter, salt, and pepper and it was amazing.

For Easter, even though it was a fully cooked ham, I figured what better way to warm it up than in the smoker. Applewood and some Stubbs Pork Marinade made the same-ol' ham something very tasty. I forgot pictures

I have 2 lbs of Chicken (thighs and breasts) that are marinated in a BBQ sauce called Chubby's. It is a sweet sauce that marinates great - not sure if it is a local thing or not. Also have some Zucchini, squash, peppers and onions I am grilling...

Next Friday, we are having a pot-luck at work. There is a young man that brings his trailer smoker and we supply the ribs, chicken, sausage, ham. I can't wait.

I love it. its big enough to fit 2-3big briskets, 3-4 pork butts or a lot of ribs. I love having the real wood smell and taste. Its very hands on which is why i like it.

Havent see Chubby's going to look for it next time i am at the store, we do have one called Chubbs... not sure it thats the same thing or not, but there is like 4 or 5 different flavors of that brand at the store.... Sounds awesome, i have to cook something this weekend i am dying to fire up the grill...

Ok so did some chicken, hamburgers, bella mushroom caps(my favorite), baked potatoes, and squash all on the grill tonight, here are a few pics.... Also my wife likes here burger well done, and thin, so she cut it in half, and low and behold it looks like a flipping smoke ring, it was sweet... i did throw in some jack Daniels smoking pellets for about an hour cook... O well it was darn good...

It is different than chubbs. It comes in mild, medium or hot. I always get the medium. It is a great marinade. Marinaded some pork loins and grilled them and they were delicious. Here is a link to their website I just found. Try it and you will love it. Its best on steak tips and boneless, skinless chicken thighs...YUM
